Why?

David Rowledgeand Boris Kovac have been working together now for over a decade. The relationship has grown into a great business partnership and also a wonderful friendship. Each party brings their own qualities to the blends and concepts created over the last ten years. The D & B Cuvee Decadente Sauvignon Blanc is a celebration of this collaboration. Using tiny parcels of some of the most interesting wines we have produced, this Sauvignon is a huge mouthful of real class and personality. It delivers full-on intense blackcurrant flavours, delicate acidity and a long finish with wonderful character.

 

How?

These are the best handpicked and individually selected grapes from the young Sauvignon vineyards at Domaine de la Ferrandiere. Gentle pressing and fermentation took place in a combination of 225l and 500l French oak, a number of the barrels went through malolactic fermentation spontaneously. Battonage was completed 3 times a week for the first 3 months and then every three months. The wine has spent 20 months on its lees. There are only 2500 bottles of this Sauvignon produced from the five most expressive barrels. The wine has been very delicately filtered so there could be some natural deposits. The involvement in this wine has been a true experience and pleasure! Enjoy!
